- 100 ml water
- 250 ml granulated sugar
- 1/2 tsp cream of tartar
- red food colouring
Heat the sugar, the water and the cream of tartar on a high heat. Mix until the sugar has dissolved.
Bring the sugar solution to the boil, then put your sugar thermometer in.
Boil the sugar until it has reached about 145 degrees Centigrade, then spoon some into a bowl of water. When it is ready, the sugar will go hard and crack easily.
Add a tiny bit of the food colouring, then leave to cool a little.
Brush some oil on the grease-proof paper, then spoon circles of the sugar onto the paper. Press the lollipop stick in, twisting them to make sure they are covered in the sugar.
