How To Make Pistachio Torte

Preheat the oven

Preheat the oven to 150ºC (300ºF) or gas mark 2.

Prepare the pistachio nut mixture

Tip the pistachios into the blender and grind them for about a minute and a half or until fairly fine. Reserve a tablespoon of ground nuts to decorate the torte later.

Cream together butter and sugar

Put the butter and sugar into a large bowl, then using an electric whisk, blend the two ingredients together until creamy.

Add the nuts
-
Add the ground pistachio nuts into the bowl with the butter and sugar mixture and stir the ingredients together well.

Separate the eggs

Separate the eggs - crack the egg on the side of a fresh bowl and slowly, while tipping between the two halves of the shell, ease the white out into the bowl while cupping the yolk in the shell.

Add the yolks to the pistachio mixture and stir.

Clean your hands thoroughly before separating the eggs - make sure they are free of any grease, oil or water, as even the tiniest amount will effect how well the whites whip.

Beat egg whites

Take an electric whisk, which needs to be completely clean and dry before you begin, and beat the egg whites until they are very stiff. This will take about 3-4 minutes to get the right consistency.

Fold the mixtures together

Put a small amount of the whipped egg whites into the bowl with the pistachio mixture and gently mix them together with the spatula, turning the ingredients over as you go.

Continue adding the egg whites a little at a time until you've folded all the ingredients together.

Bake

Pour the mixture out into the greased baking tin, using a spatula to scrape the sides so as not to miss any of the mixture.

Don't smooth it over afterwards as it will lose some of the air produced while beating the egg whites.

Put the tin in the center of the oven and bake for 45 minutes to an hour.

When the torte is slightly golden and has risen, take it out of the oven and test to see if it's done by inserting a skewer and seeing if it comes out clean.
Then leave it to sit for about 20 to 25 minutes.

After leaving the torte to cool slightly, use the sieve to sprinkle the remaining ground pistachio nuts over the top. Then open the tin, and ease it out onto a plate ready to serve.
