Step 1: You will need...

  • 2 eggs
  • 10 g butter
  • 200 g spinach
  • 1 tsp lemon juice
  • 1 clove of garlic, chopped
  • salt and freshly ground black pepper, to taste
  • brown toast
  • 1 deep frying pan
  • 1 small saucepan
  • 1 slotted spoon
  • 1 clean tea towel
  • 1 small knife
  • 1 small plate

Step 2: Poach the eggs

In the deep frying pan bring five centimetres of salted water to the boil. Break one egg into the small plate and carefully pour into the boiling water.
Repeat with other egg. Place the lid onto the pan, and turn off the heat off. Leave to cook in water for three minutes.

Use the slotted spoon to remove the eggs from the water and place on the tea towel to dry.

Step 3: Cook the spinach

Melt the butter into the saucepan. Add the garlic and the spinach and pour in the lemon juice. Stir and cook for one minute. Season with salt and pepper. Stir in and cook for one minute more. Now remove from the heat.

Step 5: Serve

Place a slice of toast onto the plate and add a bed of spinach onto the toast. Now place the eggs on top of the spinach serve the dish immediately.

    Gotta give everyone a tip on making poached eggs. Use considerably more water, let it bubble a bit and then get it going in a whirlpool with the spoon. Cook 2 minutes. Scoop out and serve. Comes out like a fluffy little cloud.

    Satuwina, they did mention put the lemon juice into the spinach while cooking it. I think u can replace the butter with Olive oil...more healthier
