Step 1: You will need

  • 4 x 175 g salmon steaks
  • 80 g carrot, peeled and sliced
  • 80 g onion, peeled and sliced
  • 80 g celery, diced
  • 80 g leek, sliced into rounds
  • 1 strip of lemon zest
  • 1 bouquet garni - 2 sprigs of thyme, 1 sprig of parsley, 2 bay leaves, tied together
  • 1 clove of garlic
  • 1 tbsp salt
  • 1 tsp black peppercorns
  • 1 ltr water
  • 200 ml white wine
  • 1 chopping board
  • 1 fish slice
  • 1 slotted spoon
  • 1 medium sized pan

Step 2: Prepare the stock

Place all the ingredients except the salmon in a pan and pour in the water and wine.

Step 3: Cook the stock

Bring to the boil over a moderate heat and simmer gently for about 40 minutes.

Step 4: Cook the salmon

Carefully slide the salmon into the stock and gently cook for 5 minutes. Remove from the heat and leave the salmon in the hot stock for a further 4-5 minutes.

Step 5: Serve the salmon

When the salmon is cooked serve onto a plate or bowl. Discard the bouquet garni, pour over a little stock and add some vegetables. Serve with crusty bread.
