Step 1: You will need...

  • 2 X 300 g thick pork chops
  • 25 ml balsamic vinegar
  • 1 tbsp honey
  • 100 ml oyster sauce, can be found in any Asian food supplier
  • 1 tbsp sweet chilli sauce, as above
  • 2 garlic cloves, minced
  • 1 head of broccoli, cut into large pieces
  • 2 tbsp almonds, thinly sliced
  • 2 tbsp olive oil
  • salt and pepper
  • 1 barbecue grill
  • 1 pair of tongs
  • 1 brush
  • 1 bowl of iced water
  • 1 slotted spoon
  • 1 small sauce pan
  • 1 large sauce pan
  • 1 spoon
  • 2 trays

Step 2: Preheat the oven

Set the oven to 200ºC (400ºF/ gas mark 6).

Step 3: Make the glaze

Into a small saucepan put the balsamic vinegar, honey, oyster sauce, sweet chilli and garlic. Mix well. Heat it up slightly, just enough to combine all the ingredients together.

Step 4: Roast the almonds

Put the almonds on a small tray and place into the oven for about 5 minutes, until the almonds are nicely browned.

Step 5: Cook the broccoli

Bring a saucepan full of water to a boil and season with a little salt. Have the iced water ready as well. Once the water has boiled, add the broccoli. Leave for a minute or so and then place into the ice water until it is cold.

Step 6: Grill the pork

Place the pork on the grill and brush the glaze on. Do that on both sides. Turn the pork a few times until nicely glazed and cooked. Repeat brushing the glaze onto it to give it a nice colour. It should take about 10 to 12 minutes in total.

Step 7: Heat the broccoli

Drizzle the broccoli with a little oil and season with salt and pepper. Place on the grill for two minutes.

Step 8: Garnish and serve

Place a chop on the plate, top with the broccoli and sprinkle the almonds over the top. Finish off with a little bit of glaze around the chop.
