How To Make Pork Enchiladas

  • 500 g pork mince
  • 10 small flour tortillas
  • 10 ml oil
  • 15 g unsalted butter
  • 1 garlic clove
  • 1 onion
  • 350 g tinned chopped tomatoes
  • 250 g kidney beans
  • 250 g cheddar cheese, grated
  • small coriander bunch
  • 10 g chipotle paste
  • 5 g oregano
  • 2 g ground cumin
  • 2 g smoked paprika
  • 1 g cayenne pepper
  • salt
  • 150 ml sour cream
  • 150 g guacamole
  • 4 spring onion, sliced


Heat oil and the butter in a frying pan, then add your minced pork. Once the meat has browned, remove it to a bowl.

Add the chopped onion and chopped garlic to the frying pan, cook until the onions soften, then add the chopped tomatoes and the beans. Cook for 5 minutes.

Add the pork and spices back to the pan and mix.

Add the chopped fresh coriander, some of the cheese and salt.

Put about 4 tbsp of the sauce into each tortilla, roll them up, and put them in a baking dish.

Pour over the remaining sauce and cheese and bake at 200 degrees Celsius for 20-30 minutes until the cheese has browned.

Serve with sour cream, guacamole and sliced spring onions.
