Ingredients

  • 2 pork loin steaks
  • vegetable oil
  • salt
  • pepper
  • flour
  • 3 eggs
  • breadcrumbs
  • 3 sage leaves

Method

Remove the fat and smaller bits of meat from the loins, leaving only the eye. You can use these off-cuts for a stock or dog food.

Roll out some cling film, place your loin on it, then fold over the cling film. Leave enough space around the loin for it to flatten out. Hit it with a rolling pin until the meat is about half a centimetre thick. Repeat with the other loin.

Season the flattened loins on both sides with salt, pepper and chopped sage. Press in the seasoning to make sure it sticks.

Heat some oil in a pan.

Dip your meat in flour, then egg, and then breadcrumbs. Fry for a couple of minutes on each side, then drain on some kitchen roll.
