How To Make Potato Cake With Smoked Salmon

Step 1: You will need…
- 3 large potatoes
- 2 tbsp fresh chives
- 60 g butter
- salt and pepper
- 60 ml olive oil
- 8 slices of smoked salmon
- 2 tsp Dijon mustard
- 2 tsp sugar
- half tsp salt
- 1 tbsp white wine vinegar
- 60 ml olive oil
- 1 grater
- 2 bowls
- 1 non-stick frying pan
- 1 spatula
- 1 spoon
- kitchen paper
- 1 whisk
Step 2: Prepare the potatoes
Into a bow, grate the potatoes and remove any excess liquid. Take a handful of potato at a time and squeeze out the excess liquid. Then return the potatoes to the bowl. When you have squeezed all the potato add the chives and the melted butter. Season with salt and pepper and mix together well.
Step 3: Cook the potato
Place the frying pan on a medium to high heat. Add a little oil to the pan. When the oil is hot spoon in 1 and a 1/2 tablespoons of potato mixture. Gently pat it down to form a cake. Fry for 3-4 minutes or until golden brown. Turn the potato cake and cook for another 3-4 minutes or until golden brown. When ready remove from the pan and place on some kitchen paper to drain. Cook all the potato mixture in this way.
Step 4: Make the dressing
Add the mustard and sugar into a bowl and season with salt. Then add the vinegar and whisk together until the sugar has dissolved. Then slowly add the oil and mix in thoroughly.
Step 5: Garnish and serve
Place a potato cake onto a plate. Then place a slice of smoked salmon on top. Now add another potato cake and a final slice of salmon. Finally garnish with the mustard dressing. And there you have potato cakes with smoked salmon made the video jug way!
