How To Make Potato Onion Soup

Head Chef Paul Mulvenna-Pegrum shows how to make potato and onion soup. This classic soup always delivers on hearty, rustic flavour. The recipe featured here was an old favourite of the chef's mother and grandmother.

Ingredients

  • 2 olive oil
  • 1/2 onion, chopped
  • 1 leek, chopped
  • 2 tsp garlic, minced
  • 200 g potatoes, chopped
  • 2 parsley, chopped
  • 500 ml vegetable stock
  • 200 ml water
  • salt
  • pepper

Step 1: Add the Elements

Heat a pan, drizzle 2 tbsp olive oil, add the 1/2 chopped onion, chopped leak, 2 tsp garlic puree, 200g potatoes and the skins of the potatoes to add ruffage. Add 2 tbsp chopped parsley, pepper, salt, 500ml vegetable stock and 200ml extra water.

Step 2: Boil and Simmer

Bring to the boil and then turn down to allow the soup to a simmer. Simmer for 10-15 minutes. Take a hand blender and blend until a nice thick consistency is gained. Pour into a bowl, sprinkle some chopped parsley and serve with bread and butter.
