How To Make Potatoes With Gorgonzola

Step 1: You will need
- 500 g new small potatoes, cut into wedges
- 2 green onions, sliced
- for the dressing:
- 100 g Gorgonzola cheese, crumbled
- ½ tbsp Dijon mustard
- 2 tbsp lemon juice
- 60 ml olive oil
- 60 g walnuts, toasted and chopped
- 1 tbsp honey
- 1 saucepan
- 1 sieve
- 2 bowls
- 1 spoon
- 1 whisk
Step 2: Cook the potatoes
Place a saucepan over a medium to high heat. Add the potatoes and cover them with water. Season them with salt. Bring them to a slow simmer and cook them for roughly 10 minutes. Once soft, drain them well through a sieve.
Step 3: Prepare the dressing
Add the gorgonzola, mustard, lemon juice, and honey into a bowl and season with salt and pepper. Mix it together well with your whisk. Slowly pour in the olive oil, in small batches, whilst continuing to mix until all the oil is used and set it aside.
Step 4: Combine and serve
Place the drained potatoes into a bowl. Add the sliced green onions, sprinkle over the walnuts and pour some of the dressing over. Combine well with a spoon. Heap a generous portion onto a serving plate. Serve hot or cold on its own as a tasty potato salad or as side dish with steak.
