Step 1: Cook the pasta

  • 250 g linguine or spaghetti
  • 4 tbsp olive oil
  • 10 raw prawns, peeled and deveined, with tails left on
  • salt and freshly ground black pepper
  • 2 cloves of garlic, crushed
  • 2 small red chillies, deseeded and finely chopped
  • 25 g butter
  • 50 g rocket (arugula), washed and dried
  • 1 lemon, cut into wedges
  • 1 medium sized saucepan
  • 1 pasta tongs
  • 1 colander
  • 1 frying pan
  • 1 spoon

Step 2: Cook the prawns.

While the linguine is cooking heat the oil in a frying pan on a medium heat. When the oil is hot add the prawns and season with salt and pepper. Give the pan a shake to turn the prawns and cook for 1 minute. Then add the garlic and chilli. Shake the pan again to mix everything and cook for a further minute. Add the butter and when it has melted give the pan another shake to coat all the prawns and then remove from the heat.

Step 3: Drain the linguine

When the pasta is cooked drain well through the colander and leave to rest. Place the prawns back on a low heat and add the rocket. Stir in and cook for 30 seconds.

Step 4: Finish the dish

Add the linguine to the prawn and rocket mixture. Toss the pasta until it is well coated in the sauce and remove from the heat.

Step 5: Serve

Use the pasta tongs to serve the linguine and share out the prawns. Decorate with a wedge of lemon.

    Had this dish in a restaurant many moons ago. I Remember the exquisite taste and the price! Suffice to say saw this recipe and tried it...lets just say it was a combination of the sublime and the cats whiskers! Tasty beyond belief. Go easy on the oil and butter its not strictly necessary for your arteries. Also mixed seafood works just as well if not better because of the different textures e.g. mussels, squid etc. And the chili gives a wonderful 'hit' but again, vary according to taste. Very quick and easy to cook, under 15mins. Lastly, wholewheat pasta will save you with the white flour GL issue being on many peoples mind these days without sacrificing on your enjoyment at all. Give it a try - one of my favourites!

    Needed to type more without the 'Enter' button. Anyway, the presentation of the served dish could do with some green garnish and a thinner slice of lemon; that huge bring of lemon reminds me of the army days.
