180° c  -  360° f

Step 1: You will need

  • 210 g flour
  • half tsp salt
  • 200 g sugar
  • 1 tsp baking soda
  • 300 g pumpkin puree, method can be found in the recipe for pumpkin pie
  • 60 ml olive oil
  • 60 ml vegetable oil
  • 2 eggs, beaten
  • 60 ml orange juice
  • one third tsp nutmeg
  • one third tsp cinnamon
  • one third tsp allspice
  • 75 g walnuts, roughly chopped
  • 1 whisk
  • 1 spoon
  • 1 1 litre bread loaf tin, buttered and floured
  • 1 large bowl
  • 1 small bowl

Step 2: Preheat the oven

Set the temperature to 180ÂșC, or gas mark 4.

Step 3: Mix the wet ingredients

In the small bowl mix the pumpkin puree, olive oil, vegetable oil, eggs and orange juice. Stir well and set aside.

Step 4: Mix the dry ingredients

In the large bowl mix the flour, sugar, salt, baking soda and the three spices.

Step 5: Mix the wet and dry ingredients

Pour the wet mixture into the large bowl with the dry ingredients and briefly mix. Finally, add the chopped walnuts.

Step 6: Transfer to the baking tin and bake

Spoon the mixture out into the tin, place it in the centre of the oven and bake for 50 minutes.

Step 7: Remove from the oven

After 50 minutes, check that the bread is ready. Insert a wooden skewer into the centre. If it comes out clean remove from the oven and set aside to cool.

Step 8: Serve

When the bread has cooled, take it out of the tin, slice and serve.

I baked a trial loaf andlet the teacher and my friends try it first before baking more of them and they all thought it was delicious. His teacher has asked me make 1 extra for the staff room and 3 off my friends have asked for the receipe!!
