Step 1: You will need

  • 250 g fresh or frozen raspberries
  • 75 g sugar
  • 1 saucepan
  • 1 wooden spoon
  • 1 spoon
  • 1 blender
  • 1 sieve

Step 2: Cook the raspberries

Pour the raspberries and sugar into a saucepan on a medium heat. Heat the mixture slowly, stirring it occasionally and gently pressing on the raspberries with a spoon.

When a liquid appears, let it simmer for about 5 to 7 minutes, allowing it to evaporate a little and then remove it from the heat.

Step 3: Purée and strain

Pour the raspberry mixture in the blender and using the "pulse" button, start to blend it. After a few seconds, increase the speed to high and purée for about 30 seconds more.

Strain the mixture through the sieve to remove most of the seeds. Be careful when handling the mixture as it will be very hot.

If your glaze turns out too thick, add a little water to it; if it is too watery just boil it a bit more to reduce the volume.

Step 4: Present and serve

Your raspberry glaze in now ready to use.
