How To Make Red Lentil Soup
Vegetarian Chef Alex Connell shows how to make red lentil soup with vegetable stock, curry paste and sliced onion. Lentils are a great source of proteins and nutrients, this recipe is filling and delicious.

Ingredients
- 250 g red lentils
- 1 ltr vegetable stock
- 1 tbsp curry paste
- 1 onion, finely sliced
- 2 tbsp oil
Step 1: Soften The Onions
Take a pan, add 2 tbsp oil and heat. Add 1 finely sliced onion. Allow to cook for around 2 minutes or until the onions go soft.
Step 2: Add The Lentils, Vegetable Stock And Curry
Once the onions are soft, add 250g red lentils and 1 litre vegetable stock. Finally, add 1 tbsp curry paste. Stir and leave for 30 minutes.
Step 3: Reduce, Blend And Serve
Once the soup has reduced to a nice thickness, blend with a hand blender, pour into a bowl and serve. Garnish with some chopped parsley and a swirl of cream.
