Ingredients

  • 3 red peppers
  • 1 banana shallot
  • 1 tsp fresh thyme leaves
  • 2 tbsp olive oil
  • black pepper
  • 600 ml chicken stock
  • 150 ml double cream

Step 1: Prepare The Ingredients

Chop up and seed your red peppers, chop up your banana shallot, and then finely chop your thyme.

Step 2: Roast Ingredients

Combine the red peppers, the banana shallot, the thyme, and the olive oil into a mixing bowl, and then finally season with some freshly ground black pepper. Mix all of these ingredients together with your hands, and then spread everything out onto a baking dish. Place this dish into an oven for about 12 minutes on a high heat.

Step 3: Blend

Now place these roasted ingredients into a food blender. Add the chicken stock and the double cream to the blender, and blend until everything is nice and smooth.

Step 4: Add To Saucepan And Serve

Pour this blended mixture to a saucepan, bring to heat, let simmer for about 5 minutes, and serve into a serving bowl.
