Thanks for a great recipe. Perhaps you could explain a little more as to why a steak becomes tougher if you turn it more than once. Also how does cooking at home compare with restaurant cooked stekas.

Turning more than once will NOT make the meat tough. As meat cooks the collagen in the meat goes through stages. Cooked rare, the collagen does not toughen the meat. The longer it cooks, the tougher the collagen becomes. Cooked longer still, the collagen relaxes and the meat becomes tender again (i.e. stews)

Since I was the world's worst meat cook, I tried your recipe for rib-eye. Used an electric frying pan, which had a thick base, similar to cast iron. Mmmm! Family loved the steaks. Only problem, my wife wants me to cook more often now.

When one turns a cut of beef juices tend to get squished out, or leak out, the juices are what helps to provide the tenderness. Thus the more you flip the more juices leak out the more tough.. Similarly if you are one that flattens the cut with a spatula you will experience tougher meat.. this is also why cuts that are cooked longer are tougher.

This will make the ultimate ribeye; I gaurantee it (must be done on "real" flame grill):
I generally make my own seasoning rubs, but one of the best steak rubs out there is "Emeril's Steak Rub". What you do is take your ribeye(s) and put a LOT of olive oil all over them. LIBERALLY apply the rub all of the steak(s) and "rub" the seasoning into the meat. Get your gas or coal fired grill as hot as you can get it and throw the steaks on. The key here is to get a grease type fire going so that the flames are all over the meat. This creates a true "sear". Grill the steaks in the flame for 1:30 - 2:00 minutes on one side, and 1:45 - 2:15 on the other. Cut the heat down to medium, or get the grease flames under control and cook the steak until done. The key is to truely sear the living hell out of the steak so that the most of the seasoning gets burned off, but locks in a great flavor and all the great taste of the meat. The outside of the steak should have an almost crisp to it. This method will create the most flavorful steak you can imagine and friends and family will be completely impressed with your master grilling skills!
