How To Make Rice Pudding

Step 1: You will need
- 200 g short grain rice
- half a vanilla pod
- 3 pieces of star anis
- 350 ml milk
- 350 ml cream
- 100 g sugar
- 3 egg yolks
- 1 whisk
- 1 wooden spoon
- 1 saucepan
- 1 cutting board
- 1 knife
- 1 spoon
- 1 bowl
Step 2: Prepare the base
Make a slit in the vanilla pod along its length, being careful not to cut all the way through. Scrape the pulp from the inside of the pod and place both the pod and pulp in the saucepan.
Add the star anis, the milk and the cream and bring the mixture to a boil.
Step 3: Add the rice
When boiling, add the rice, and return to a boil then reduce the heat to a simmer. Stir regularly and let it simmer for 15-20 minutes.
Remember to stir during this phase or your rice pudding may burn on the bottom!
Take out the anis and the vanilla bean and remove the pan from the heat.
Step 4: Prepare the egg mix
Put the eggs and sugar into a bowl. Using the whisk, whip them together until the mixture becomes pale in colour.
Step 5: Add the egg mix
Add a little of the pudding to the egg mix, just enough to raise the temperature of the eggs. Pour all of the egg mixture into the saucepan with the rice pudding and stir it together well.
Step 6: Finish on the stove
Return the saucepan to the stove on a low heat and stir it constantly until it thickens. This usually takes about a minute.
Step 7: Serve
Your Rice Pudding is now ready to serve. Enjoy it either warm or cold. If you wish, you can also garnish with a dollop of jam or some fresh fruit.
A quick tip: To reheat rice pudding, first heat a few tablespoons of water in a pan and then fold it into the pudding.

im making this pudding for my catering gcse assement and i have 3 hours to cook 4 dishes would i beable to bang it all in a presure cooker
I love the creaminess of this pudding .... that's something that's missing from my usual, oven-baked recipe. A hint: If you're like me and don't like the taste of star anise, you can either eliminate it completely, or replace it with a different favourite taste. In my opinion, rice pudding goes brilliantly with cardamom. Enjoy!
So many ways to make rice pudding. I love 'em all. A very homey dish. Spicing is certainly optional. The use of vanilla bean is good cooking technique, but I would be more likely to add a spoonful of vanilla extract after the pudding began to cool a bit. (So much of the flavor cooks off if adding to a very hot dish.)

ALL that fuss! My mum would butter a pyrex dish, sprinkle in some rice a bit of suagar and a pinch of cinnamon and 2 pinches of nutmeg..empty a pint of cold milk on it and put it in a warm/low oven for about an hour. It was delishhh! The skin was demanded by all. Sorry I can give exact measurements.

Pretty nice - didn't have star anise and I had to use vanilla essence and some cinnamon powder. It takes ages to thicken, have patience. I nearly gave up but then I started to notice a difference. Might make it again, but it wasn't really my favourite. Wow I love this site, I am Delia'd up to the max now ... :)
I was hoping for baked rice pudding with cinnamon on top to make a skin. Is there a recipe for that somewhere
oh sweet lord! I was hoping this would be a recipe for BAKED rice pudding like my family have all traditionally made it, what is with the anis? Pretentious and it doesn't even taste nice, guess I need to track down the old family recipe instead. So disapointed :(
