Step 1: You will need…

  • 500 g ricotta cheese
  • 6 large eggs
  • 200 g grated parmesan cheese
  • 2 tsp fresh flat-leaved parsley, chopped
  • 2 tbsp fresh thyme leaves, chopped
  • 1 tbsp olive oil
  • Salt and pepper
  • for the dressing:
  • 3 to 4 ripe tomatoes, finely diced
  • 1 spring onion, finely diced
  • 2 tbsp red wine vinegar
  • 50 ml olive oil
  • Salt and pepper
  • 1 chopping board
  • 2 knives
  • Kitchen paper
  • 1 medium bowl
  • 1 hand whisk
  • 1 spatula
  • 1 baking tin measuring approximately 27cm
  • 1 small bowl for dressing
  • 1 spoon to combine dressing

Step 2: Preheat the oven

First of all, preheat the oven to 175º Celsius.

Step 3: Break and whisk the eggs

Break all six of the eggs into the medium-sized bowl and discard the shells, then, using a hand whisk, whisk them briefly.

Step 4: Mix in remaining ingredients and season

Add the ricotta cheese, parmesan, and herbs to the bowl. Season with salt and pepper and then mix all the ingredients together well.

Step 5: Grease the baking tin

Grease the baking tin by dipping a piece of kitchen paper into olive oil and lightly rubbing it around the inside of the tin.

Step 6: Egg mixture

Pour the egg and cheese mixture out into the baking tin and smooth it over with a spatula to finish.

Step 7: Bake

Place the tin in the centre of the oven and bake for 20 minutes to half and hour.

Step 8: Make the dressing

Pour the vinegar into a small bowl, season with a little salt and pepper and give a it quick stir, then add the oil and stir again.


Finally, add the tomatoes and spring onion and then mix all the ingredients together well.

Step 9: Remove frittata from oven

When puffed, golden and lightly set, remove the frittata from the oven.

Step 10: Serve

Serve straight away or at room temperature with the dressing.
