Ingredients

  • 2 tsp rapeseed oil
  • 1 tsp black mustard seeds
  • 3 cloves garlic
  • salt
  • 1/2 tsp red chilli powder
  • 2 red onions
  • 2 tomatoes
  • 1/2 tsp tomato puree
  • 2 tsp fresh coriander
  • 1 green chilli
  • 1/2 tsp turmeric

Step 1: Prepare The Ingredients

Chop your fresh coriander, crush your garlic cloves, dice your red onions, finely slice your green chilli, and chop your tomatoes.

Step 2: Prepare The Aubergines

Roast the aubergine on the flame of the hob. After 3 - 5 minutes, take the aubergine off and leave it aside to rest and cool. Once cool, peel the black skin off the aubergine, and mash.

Step 3: Fry The Ingredients

Bring a skillet to heat, and drizzle some rapeseed oil into the base of the pan, add the crushed garlic, the red chilli powder, the green chillies, the red onions, the salt, and then stir and leave for a few moments. Add the tomatoes, and stir well.

Step 4: Season

Add your turmeric, the tomato puree, the chopped coriander, and then add the mashed aubergine, and mix well. Place the lid on this pan, and leave for about 3 minutes.

Step 5: Serve

Serve with rice, and garnish with some chopped coriander.
