How To Make Roasted Beetroot With Dressing

Step 1: Preheat the oven
- 500 g raw baby beetroot, washed
- 1 tbsp vegetable oil
- 2 tbsp rice wine vinegar
- salt and pepper, to taste
- 3 tbsp crème fraiche
- 1 tbsp wholegrain mustard
- ½ medium lemon, zest and juice
- 1 tbsp finely chopped parsley
- 1 sharp knife
- 1 saucepan
- 1 slotted spoon
- 1 roasting tin
- 1 large spoon
- 1 small bowl
- 1 fork or whisk
Step 2: Cook beetroot
Cook the beetroot in plenty of boiling salted water for 20 minutes.
Step 3: Remove beetroot
Remove the beetroot from the water and set aside to cool slightly.
Step 4: Peel
Peel the beetroot and place them in the roasting tin.
Step 5: Toss
Toss the beetroot with oil, vinegar, salt and pepper.
Step 6: Roast
Roast the beetroot in the oven until they are tender,this should take about 20 minutes.
Keep checking with a sharp knife as the cooking times can vary greatly.
Step 7: Mix dressing ingredients
Mix the crème fraiche, mustard, lemon zest and juice together in a small bowl. Season to taste with salt and pepper.
Step 8: Transfer to serving dish
Transfer the beetroot to a warmed serving dish.
Step 9: Serve
Drizzle the dressing over the dressing, sprinkle with parsley and serve.
