Step 1: Roasted Chutney Paneer.

Hi, welcome to ShowMeTheCurry.com, I’m Illusia. And I’m Higle and today we are making roasted chutney paneer. It’s a great appetizer and it’s great for cocktail parties and also just as a starter to any meal. Here’s what you’ll need

Step 2: Cut paneer:

Paneer cut up in large 1 by 1 pieces Coriander or Mint Chutney, enough to coat the paneer Chaat Masala for garnishing Spray cooking oil, Sliced tomatoes and onions for garnishing Lime or lemon juice for garnishing.

Step 3: Marinate paneer cubes:

We are going to start off with marinating our paneer cubes. So we are going to take a ziploc bag and add or paneer inside. If you want to make the paneer pieces a little smaller Now if you want to make the paneer pieces a little smaller that’s absolutely ok. Now for our Chutney. We are using mint chutney, but you can use the green coriander chutney also that just as well. And if you need a recipe for mint chutney you can visit our website at ShowmeTheCurry.com. Zip up the bag and give it a nice mix. Very gently because paneer breaks apart very easily. You just want to coat it and make sure all the pieces are evenly coated. And it‘s coated nicely so we can put this in the refrigerator for about two hours to let it marinate.

Step 4: Prepare paneer:

It’s been two hours and we have lined our pan with foil and we are going to go ahead and spray like this so it doesn’t stick. We are going to pull our paneer out of the refrigerator, give it a nice mix once more. And were going to go ahead and take the paneer out and put it on our pan. That really looks good. It smells really good too. But mint has a nice fresh smell to it. And the remaining Chutney which is in our bag we are going to use later on to baste our paneer while it is cooking. So it doesn’t dry out. That’s a very good idea. You can actually go ahead after its done and put some little toothpicks and serve at a cocktail party. Right. Or you can do it on wooden skewers. Yeah, that is also a great idea.

Step 5: Put paneer in the oven:

OK our paneer is ready to go into our oven. We are going to broil it on high. And I have my oven rack at very the highest or one below the highest point and this helps the paneer to cook a little faster. You are going to broil it for about 5 minutes and of course everybody’s ovens are a different temperature so be sure to keep on eye on it you don’t want it to burn. OK it looks like our paneer is browning nicely we are going to pull it out and turn it to the other side. And then some of the leftover chutney we had in our Zip lock bag we can just take a little and pour over the top

Step 6: Cook second side:

Now this can go back inside our oven and we are going to cook it for another few minutes Now remember the oven is already hot so the second side will be a lot faster in cooking than the first.

Step 7: The perfect appetizer:

Now it is ready to plate so we are going to take a sliced tomato and put on the bottom of our platter. Then we are going to top with our paneer pieces. Looks good doesn’t it. It does. Then we are going to take some onion rings and just garnish on top. One more,. Very good. And my little touch for the adventurous souls. Yes you have to have a touch. But it looks good. Then we can take Chaat Masala and just sprinkle lightly on top. You can also take a little lemon or lime juice and just a little drizzle on top. My mouth is watering. That’s it . Perfect appetizer,. Ready to go.
