How To Make Roasted Lamb & Roasted Garlic Mayonnaise Sandwich

Step 1: You will need...
- 300 g lamb leg or shoulder, without the bone
- 6 tbsp olive oil
- 1 tbsp thyme, chopped
- 1 crusty baguette
- 1 bunch of watercress
- 1 tomato, sliced
- 1/2 an onion, sliced
- for the garlic mayonnaise:
- 1 bulb of garlic, halved
- 1 tbsp olive oil
- 4 sprigs of thyme
- 3 tbsp mayonnaise
- 2 tbsp parsley, chopped
- salt and white pepper
- 1 barbecue grill
- aluminium foil
- 1 bowl
- 1 spoon
- 1 set of tongs
- 1 chopping board
- 1 knife
Step 2: Preheat the oven
Set the oven at 200°C (400ºF/ gas mark 6).
Step 3: Prepare the garlic
In the middle of a piece of foil, place the two garlic halves. Drizzle over a little oil, season with salt and white pepper, put the thyme on top and wrap it up well.
Step 4: Roast the garlic
Place the wrapped garlic into the centre of the oven and leave it to roast for about 20 minutes until brownish and soft.
Step 5: Season the lamb
First, drizzle over some olive oil and then season with salt and white pepper. Sprinkle with chopped thyme then turn the lamb over and repeat the process.
Step 6: Barbecue the lamb
Place the lamb on the barbecue and grill for about 7 minutes on either side. If the flames rise too high then just splash over a little water to prevent the meat from burning.
When the meat is done, take it off the barbecue. If you like your meat well-done you may need to leave it longer than the time suggested.
Step 7: Remove the garlic from the oven
Take the garlic parcel out of the oven and unwrap it. Then allow the garlic to cool down slightly.
Step 8: Make the mayonnaise
Squeeze the pulp out of the garlic and then take a spoon and mash it up. Next, add the mayonnaise, parsley, season with a little salt and white pepper and mix thoroughly.
Step 9: Slice the lamb
Using a sharp knife, thinly slice the lamb into one-half centimetre chunks.
Step 10: Put the sandwich together
Cut off both ends of baguette, then cut down one side to open it up ready to fill. Next, put two spoonfuls of the garlic mayonnaise on to one side of the baguette and spread it all along. Add the remaining mayonnaise to the other side and cover.
Arrange the chopped lamb along one half of the baguette. Add several slices of tomato. Then some onion, and watercress, drizzle over some olive oil and finally season with salt and pepper. Close the sandwich up and cut in half.
Step 11: Serve
All that is left is to serve the sandwich with a refreshing drink and enjoy!
