How To Make Roasted Parsnips

Step 1: You will need…
- 750 g parsnips, peeled, top and tailed
- 5 tbsp vegetable oil
- 1 tbsp salt
- sea salt and pepper
- 1 roasting tray
- 1 medium pan
- 1 colander
- tongs
- kitchen roll
Step 2: Preheat the oven
Set the oven to 200ºC (400ºF/ gas mark 6).
Step 3: Heat the water
Place the medium pan, half full of water on a high heat. Add the salt and bring to the boil.
Step 4: Heat the oil
Put the baking tray in the lowest part of the oven. Add the oil and leave it to heat.
Step 5: Parboil the parsnips
Put the parsnips into the boiling water and cook for roughly 5 minutes, until not quite tender.
Step 6: Drain
Place the colander in the sink and drain the parsnips well.
Step 7: Roast the parsnips
Remove the baking tray from the oven and place the parboiled parsnips into the oil. Roll and turn them over in the hot oil, making sure that they are all well coated. Season with salt and a dash of black pepper. Place them into the lowest part of the oven and cook for 15 minutes. After this time, turn them once more with your tongs and cook for a further 15 minutes.
Step 8: Drain
Once cooked, drain the parsnips onto a plate lined with kitchen roll.
Step 9: Serve
Transfer them onto a serving dish and keep warm until you are ready to serve.

I just made these. They're delicious! The parboiling cuts down on the cooking time, and keeps them nice and moist inside, while staying crispy outside. Yum!!
Was nice to see this video to confirm I am cooking them correctly! Tips to newbie cooks - if you're roasting parsnips and potatoes for a roast, these take a fraction of the time. And you do have to watch them as they can cook very quickly suddenly and burn, whereas the potatoes just hang around.
