Prepare the tomatoes

Put the pieces of tomato onto the baking tray and drizzle with the olive oil. Season each tomato with salt and pepper and then sprinkle over the chopped thyme.

Roast the tomatoes

Set the temperature of the oven at 100ºC (230ºF) or the lowest gas mark.

Place the baking tray with the tomatoes into the centre of the oven and leave them to roast for 5 hours. This will bring out all the delicious flavour of the tomatoes.

Then remove the tomatoes from the oven and leave them to cool down slightly.

Make the paste

Put the tomatoes into the blender and blend for about 30 seconds, then spoon the paste out into a small bowl.

Heat the oil

Place the frying pan over a moderate heat, add some olive oil and allow to heat for 2-3 minutes.

Fry the bread

Then, put the slices of bread into the pan and fry for a minute on each side until golden brown. Remove the pan from the heat.

Drain excess oil

Using the tongs, take the fried bread out of the pan and place onto kitchen paper. Pat the top sides dry using more kitchen paper.

Serve

Spread the paste generously over each of the slices of fried bread and garnish with fresh basil.
