Step 1: You will need

  • 1 head of Bibb or Boston lettuce
  • 1 apple, peeled, cored and sliced
  • 16 walnuts
  • 2 tomatoes, cut into quarters
  • 8 black olives, pitted
  • 2 anchovies
  • 1 tsp salt
  • 1 tsp Dijon mustard
  • 2 cloves garlic, minced
  • 30 ml red wine vinegar
  • 90 ml olive oil
  • 2 tbsp freshly chopped parsley
  • Freshly ground black pepper and salt to taste
  • 2 bowls
  • 1 pestle and mortar
  • 1 frying pan
  • 1 whisk
  • 1 sharp chopping knife
  • 1 chopping board

Step 2: Toast the walnuts

Pour a little olive oil into a frying pan over a high heat and toast the walnuts while moving.

Once browned, remove from the pan, allow to cool and roughly chop into small pieces.

Step 3: Arrange the salad

Arrange the lettuce in a bowl and add the sliced apple, tomatoes, toasted walnuts and olives.

Step 4: Mash the anchovies

Put the anchovies and 1 tsp of salt into a mortar. Mash them to a paste.

Step 5: Blend the paste

Place the paste in a bowl and add the garlic, mustard, red wine vinegar and season with freshly ground pepper.

Blend together until thoroughly combined

Step 6: Add the oil and parsley

Slowly drizzle in the olive oil, a little at a time, while continuing to blend to a smooth sauce consistency.

Add the parsley and mix again.

Step 7: Serve

Pour the sauce over the salad, mix well so all the ingredients are coated in dressing and serve.
