How To Make Salad Cream

Why buy salad cream from the shop when you can make your own cheaply, quickly and easily at home? Chef Paul Mulvenna-Pegrum shows you how.

  • 4 hard-boiled egg yolks
  • 5 olive oil
  • 1 tsp garlic powder
  • 1 tsp English mustard
  • 2 white vinegar
  • 3 double cream
  • pinch salt
  • pinch pepper


Place the egg yolks in a large bowl and crush with a fork. Pour in the olive oil and whisk the yolks and oil together to form a paste. Add the garlic powder, salt, pepper, mustard, vinegar and mix together. Add the double cream gradually and mix together. Make sure you add the cream slowly or the vinegar will cause it to curdle. Once the cream is all combined, you can add a pinch of sugar or another sweetener to taste.

Serve with salad or in sandwiches. This salad cream is particularly tasty with egg sandwiches!
