Step 1: Cook the potatoes

  • 6 small new potatoes
  • 200 g green beans
  • 100 g mixed lettuce leaves
  • 6 cooked artichoke hearts, cut in half
  • 4 tomatoes, cut into wedges
  • 4 eggs, hard boiled and halved
  • 150 g black olives, pitted
  • 200 g good quality canned tuna or fresh tuna
  • for the vinaigrette:
  • 3 tbsp balsamic vinegar
  • 2 tsp Dijon mustard
  • 1 clove of garlic, minced
  • freshly ground black pepper
  • 9 tbsp extra virgin olive oil
  • 1 tbsp fresh basil
  • 1 tbsp fresh parsley
  • salt and pepper
  • 1 saucepan
  • 1 bowl of cold water
  • 2 bowls
  • 1 knife
  • 1 chopping board
  • 1 colander
  • 2 plates or trays
  • 1 small whisk
  • 1 slotted spoon

Rinse the potatoes under cold water, drain and set aside.

Once cooled, cut them in half.

Step 2: Cook the beans

Trim the ends of the green beans and place them in a saucepan of boiling, salted water for 2-3 minutes.

Drain and refresh them in water.

Drain once again and set aside for later.

Step 3: Make the vinaigrette

In a bowl, mix together the balsamic vinegar, garlic, mustard and salt and pepper. While whisking, slowly add the olive oil.

Step 4: Mix the salad

Take a big bowl and add the lettuce, potatoes, artichoke hearts, green beans, tomato wedges and olives.

Drizzle the vinaigrette on top.

Add the basil and parsley.

Season with salt and lightly toss together.

Step 5: Arrange and serve

Arrange the salad on a serving plate and finish by placing the eggs and tuna on top.

    This salad has such attractive ingredients, I prefer to arrange the ingredients on top of the lettuce placed on a platter so that all the items show nicely. Instead of mixing the dressing in, I would drizzle it on top. Tuna is, of course, traditional, but I am thinking I would prefer chicken.

    I had to make a french salad for a party we were having at work and after researching, this was the best recipe. The only thing is I didn't add the olives and artichokes. I got a lot of compliments on this recipe.
