How To Make Salmon Croquettes

Cooking is not my forte but I do know how to do a few things in the kitchen. This meal is easy and delicious. Within twenty minutes you can be snacking on a salmon patty.
-
Step 1:
-
Prepare The Salmon
-
Get the red salmon and drain off the juice. Then, I just dump the whole thing in the bowl and now I'm going to split it up. You can leave the bone that's in there. Leave everything in there. It's perfectly okay.
-
Step 2:
-
Create The Mixture
-
Now I'm going to mix in a quarter of a cup of onions. Then I'm going to add one egg. And finally, some people like to crush up dried bread crumbs or crackers. I use the bread crumbs, the Italian style, and so I put about a half a cup, or three-quarters of a cup of bread crumbs in there.
-
Step 3:
-
Form The Patty
-
And then you mix it with your hands until it makes a fairly dry patty. You want it to be able to hold together. Put it in a little cake, like a little patty like that and have it stay together. You don't want it falling apart on you.
A little Szechuan style pepper blend is good. And then I can grind a little peppercorn in there just for good measure, but not a great deal.
-
Step 4:
-
Add The Patties To The Pan
-
It looks like I put a lot of oil in the pan, but it's only about a cup of oil. When you put your patties in th pan, you want them to sort of sizzle. Here you can see they're kind of bubbling a little bit. And one can of salmon will make four to five patties.
-
Step 5:
-
Cook The Patty
-
Let those cook for about five minutes, or somewhere around that time. And then I flip them over and do them for about five more on the other side. There you've got a nice, quick, easy dinner.
Now see how crispy that is? I'm going to turn them all now. It's been exactly five minutes, or four and a half minutes, somewhere around there. They're great hot or cold.
-
Step 6:
-
Serve
-
I've got the heat on medium high. You do not want them to sit in there once they're brown, like on the other side. Like they are on this side.
Then we will take them out. I've already put two layers of paper towels on my plate. Put another layer of paper towel on top and press to get the excess oil out. Then we're ready to take them out!
And the croquettes turned out great.
