How To Make Salmon Fish Cakes

You Will Need
- 8 large potatoes
- 2 sunflower oil
- 2 unsalted butter
- 3 - 4 milk
- 1 - 2 chopped dill
- 1 chopped chives
- 2 salmon fillets
- sea salt
- black pepper
- 2 - 3 plain flour
Method
Par boil your potatoes for around 10 minutes then, using a colander, steam the salmon fillets over the potatoes for 6 minutes. Your potatoes will now be fully cooked, as should the salmon. Put the potatoes into a large bowl with 1tbsp of butter and the milk and mash well. Season with salt and pepper and add the dill and chives.
Remove the skin from the salmon fillet and crumble it into the potato mix. Stir everything together and then shape on a floured cutting board to keep them from sticking. Use the remaining butter and some sunflower oil to fry your fishcakes in. Remember all your ingredients are cooked so you only need to fry for a few minutes on each side to get a nice crunchy brown outside.
