Ingredients

  • 2 fillets of salmon
  • milk
  • 2 cups (500ml) mashed potato
  • 1 tsp fresh parsley, chopped
  • 1 tsp lemon zest
  • 1 tsp capers, chopped
  • 1 boiled egg, grated
  • 1 lemon juice
  • breadcrumbs
  • flour
  • 1 egg

Method

Place your salmon fillets in a baking dish with a little milk and bake covered in tinfoil for 7-8 minutes at 160 degrees.

Break the salmon up in a bowl and add the mashed potato, parsley, capers, lemon zest, boiled egg and lemon juice and mix together. You can add a few breadcrumbs if the texture is too loose.

Mould into shapes with a pastry cutter. Cover in flour, egg and breadcrumbs and fry in vegetable oil for 3-4 minutes turning constantly until golden brown.
