How To Make Salmon With Asparagus And Lime

Step 1: Mix the breadcrumbs and spring onions
- 4 salmon cutlets or fillets
- 1 cups (250ml) breadcrumbs (day-old bread)
- 1 bunch of spring onions, finely chopped
- 5 tbsp olive oil
- 1 bunch of fresh asparagus, peeled and cut in half
- 1 large red pepper, cut into strips
- salt

- For the dressing:
- 170 ml fish sauce
- 1 bunch fresh coriander, root end finely chopped
- 1 small fresh red chilli, deseeded and finely chopped
- 1 bunch spring onions, finely chopped
- 2 garlic cloves, crushed
- 3 fresh limes, juiced
- 180 g brown sugar
- 2 trays
- 1 small bowl
- 1 spoon
- 1 small saucepan
- 1 slotted spoon
- 1 medium bowl
- 2 large non-stick frying pans
- 1 large dinner plate
Step 2: Coat the salmon in breadcrumbs
Next, take the salmon cutlets or fillets and press them into the breadcrumb mixture, coating them all over. Set them to one side.
Step 3: Make the dressing
Put the fish sauce, chopped coriander, chilli, chopped spring onions, garlic, lime juice and brown sugar into a small bowl. Stir together thoroughly.
Step 4: Prepare the asparagus
Bring a saucepan of salted water to the boil and have a bowl containing iced water ready. Once the water boils, add the asparagus and leave for one and a half minutes. Remove the asparagus and plunge them into the iced water.
Take them out of the water straight away using a slotted spoon and then drain them on kitchen paper.
Step 5: Heat the oil
For the fish; put 4 tbsp olive oil in a large non-stick frying-pan. Place over a medium temperature and allow the oil to heat but not smoke.
Step 6: Fry the salmon
Fry the fish on both sides until all the cutlets, or fillets, are golden brown. Once cooked, put to one side.
Step 7: Cook the vegetables
Using another pan, heat the remaining olive oil and then sweat the red peppers for a couple of minutes, tossing occasionally. Add the asparagus tossing gently for another minute.
Step 8: Add the dressing
Add the dressing to the vegetables and stir briefly.
Step 9: Serve
Serve the salmon on a large dinner plate topped with the vegetables and the coriander and lime sauce. For a finishing touch; garnish with a sprig of coriander.
