How To Make Salt And Pepper Squid
Squid is part of various cuisines across many countries. In this recipe you will learn how to cook squid with salt and pepper. Serve this dish as a light lunch, or as a main meal with salad.

Ingredients
- 300 g Squid
- 4 tbsp Corn Flour
- 4 tbsp Plain Flour
- 40 g Sea Salt
- 40 g Szechuan Pepper Corns
- 2 small Birdseye Chillies
Step 1: Prepare the Squid
Push your thumb into the wing part of the squid and pull the wing away, setting aside for later. Cut off the end of the squid above the eyes. Squeeze the removed end to extract the beak which is not wanted. Pull out the cuts from the main part of the squid and throw them away. Cut through one layer of the body so it opens up, scrape clean and trim the edges, then cut them in half. On the inside, which is slightly softer, score shallowly at angles to give a pineapple effect. Also scrape clean the wings and cut off the little piece of muscle.
Step 2: Prepare the Mix
Put the flour in a bowl. Grind all the other ingredients to a powder, then mix them into the flour.
Step 3: Fry
Rub the pieces of squid through the flour mix to coat them. Put the pieces in to a deep fat fryer at about 160 degrees celcius and cook for just over a minute to crisp up. Drain and place on a piece of kitchen paper towel to soak up the excess fat.
Step 4: Serve
The pieces will be curled up due to the scoring. Serve with a side of chilli jam and a slice of lime.
