Step 1: Wash the fish
- 1 piece of salt cod, (spanish: bacalao), the size depending on the amount needed for the recipe
- plenty of water for soaking
- 1 bowl, large enough for the fish to fit
- 1 chopping board
- 1 strong knife
Step 2: Soak the fish
Place the washed fish in a large bowl skin side-up and cover with water.
Step 3: Refrigerate
Place the bowl in the fridge to soak for 8 hours.
Step 4: Change the water
After about 8 hours remove the fish from the fridge and change the water. Place the fish back in the fridge, and repeat this process another 2 times over the next 16 hours.
Step 5: Finish the dish
Check if the salt cod needs more soaking by bending it. As a general rule, when you cook the cod, it requires only about 24 hours soaking but when making recipes using raw cod soak it for 48 hours, remembering to change the water every 8 hours.
