Step 1: You will need

  • 500 g salt cod, soaked overnight
  • 4 tbsp olive oil
  • 4 cloves garlic, cut into slivers
  • for the tomato sauce:
  • 2 eggs, beaten together
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 red pepper, deseeded & chopped
  • 2 tsp paprika
  • 4 tomatoes, skinned, deseeded & chopped
  • 100 ml fine sherry
  • 1 bay leaf
  • 1 tbsp vinegar
  • freshly ground black pepper
  • 1 medium sized pan
  • 1 slotted spoon
  • 1 serving plate
  • 1 mixing spoon
  • 1 chopping board

Step 2: Brown garlic

Put olive oil into the frying pan. Add garlic. Cook until the garlic is brown, stirring all the time. Once the garlic is brow, discard it.

Step 3: Brown the fish

In the same pan, cook the pieces of cod for 2 minutes on both sides.

Move the pan slightly so the cod does not stick. When the fish is ready, remove from the pan and leave to cool.

Step 4: Make the sauce

In the same pan, gently fry the chopped onion, stirring continuously. Add the garlic and when the onion starts to colour, add the chopped peppers, stir in the paprika and finally the tomatoes.

Sauté for approximately 5 minutes.

Step 5: Finish the sauce

Add the sherry, bay leaf and the vinegar. Leave to cook for approximately 10 minutes.

Step 6: Shred the fish

Take off the flesh of the fish, discarding any bones and skin.

Step 7: Combine

Add the fish to the sauce. Stir lightly and heat through for about 5 minutes.

Step 8: Add the egg

Add a couple of turns of pepper to the sauce, then mix in the beaten egg and scramble for about 30 seconds.

Step 9: Serve

Place the fish stew into plates or large soup dishes and serve with plenty of crusty bread.

    the cod has a very strong and overpowering flavour next time i would not use so much cod
