Step : You will need

  • 2 tbsp olive oil
  • 8 cumberland sausages
  • 2 carrots
  • 1 onion
  • 4 garlic cloves
  • 1 leek
  • 280 ml red wine
  • 560 ml beef stock
  • 3 sprigs of rosemary
  • 1 handful of thyme
  • 1 tbsp flour
  • salt and pepper

Preheat oven to 150 C

Slice 2 carrots and 1 leek. Finely chop 1 onion, 4 garlic cloves and 3 sprigs of rosemary. Prepare 560 ml of beef stock.

Heat 1 tbsp of olive oil in a frying pan. Add 8 Cumberland sausages and fry for about 4 minutes until golden. Transfer to a casserole dish.

Fry the onions and garlic until soft, transfer to the casserole dish.

Fry off the carrots and leaks, transfer to the casserole dish.

Deglaze the frying pan with 280 ml of red wine. Pour it into the casserole dish, along with 560 ml of beef stock, chopped rosemary and a handful of fresh thyme. Season with salt and pepper. Lastly add 1 tbsp of flour which will thicken the sauce.

Put the lid onto the casserole dish and place in the pre-heated oven for 1 hour.

Serve with mashed potato.

    Why use the frying pan? Much easier and better to do it all in that expensive flame proof casserole dish!

    The recipe was excelent and would recommend it, but instead of frying the sausages, grill them.

    The sausage are only fryed to brown them mostly!! there in the oven for then an hour? Id say that makes them very safe to eat and cooked.
