I'm going to show you how to make sausage gravy. Really, really nice! So I got a hot pan and lots of olive oil on there on the go to bring it to temperature. So I've got some nice red onions, I'm going to run through.

Here that sizzle? Really nice! Absolutely fantastic! Now, when you're making sausage gravy, you know it's up to you, you know, add some fresh time to it, red wine to it, but today, I'm going to do some beer to it. It'll be a nice beer red winey type gravy, so add a little twist to it, really nice! So, get them to sweat it out; you don't really want to cook them about color. Lovely little bit of stock here – it's what we add once the onions are sweated out.

Add the sausage to brown. Now, you can cook the sausage separately and add the gravy at the end but I'm going to add the sausage to it when I have a nice hot pan going. Jut use my heat.

So we are going to brown them up as well, so we're doing two things at once, we're cooking our sausage and browning them up as well. Now, it's all about preparation as well. I have my stock ready there as well; I've got my beer as well.

So we're going to cook that down nicely, and I'm going to smother it down, you don't have to cover your sausage. Cook for about 20 minutes, so if you're in a bit of a rush, just toss them down. I'm going to add the beer.

Again, lovely bit of color will be nice on the sausage but we don't have to. Distribute the beer through the onions so we have a nice beery taste to our gravy. We'll add some black pepper to that.

Again, like I said, you can brown your sausage in the oven but this more like all in one. Beautiful! And we're going to add our stock to that and let this simmer for 28-30 minutes and the gravy will reduce by half, and the sausage will be cooked through, the onions will be cooked perfectly, and you can always add some herbs to it, thyme, basil. Sausage onions gravy, absolutely fantastic colors there, sausage cooked/reduced to right consistency, ready to serve.

Take it off. Unbelievable! Smells good. I can smell that beer as well.
