Ingredients

  • 2 chicken breasts
  • 700 g new potatoes
  • 2 smoked bacon rashers, chopped
  • 1 rosemary sprig
  • 2 garlic cloves
  • 1 onion, diced
  • salt
  • pepper

Method

Chop up your new potatoes and place them in a pan of boiling water, and boil them for about 10 minutes. When they are ready they should fall back into the water when you prick them with a sharp knife and lift them out of the pan.

Whilst the potatoes are cooking, heat 1 tbsp of olive oil and add the chopped onions. Mix them about, then add the chicken. When the meat turns white it has sealed, you can now turn the heat down and add the bacon, garlic and rosemary. If it sticks, add a dash of water.

When the potatoes are ready, drain them and add them to the chicken. Season and cook for another 10 minutes. Check the chicken is cooked by cutting a piece in half and making sure it is not pink.
