Ingredients

  • 280 g plain flour
  • 85 g butter, melted
  • 1 baking powder
  • 1 tsp bicarbonate of soda
  • 1 pinch of salt
  • 200 g cheese, grated
  • 2 eggs
  • 250 ml milk

Method

Pre-heat your oven to 200 degrees Celsius.

Sift the flour, the baking powder and the bicarbonate of soda into a bowl, then mix in the grated cheese and salt. Make a well in the middle of the dry ingredients and set the bowl aside.

Beat the eggs, then whisk in the melted butter and the milk. Pour the wet ingredients into the well you made in the dry ingredients, and gently mix everything together.

Spoon the mixture into a 6 muffin tin which has been greased and floured, and bake them for 20-25 minutes.

To check whether they are cooked, insert a skewer into one of the muffins; if the skewer comes out clean, then muffins are ready.
