I have been in the catering trade for over 30 years, 28 spent as a chef du cuisine.
Scrambled egg should NEVER be cooked over direct heat. It should be done in a bain marie or very good results can be achieved on very low power in a microwave, but, the essence is to keep WHISKING it until it is glossy and creamy.you should melt the butter first, add the eggs salt and pepper and cook as above. A little cream can be added at the end if wished. The clown who said dont add salt needs to remember that you cook seasoning into food to enhance and bring out the flavours, not put it on the top only tasting salt first. I promise you that my scrambled egg is the best on the planet, no modesty intended, but the one in the video is just an over cooked mess.&lt;/p&gt;</description>
