How To Make Sea Bass In Soy With Ginger

Step : You will need…
- 4 spring onions, sliced diagonally
- 2cm fresh ginger, cut into thin strips
- 2 tbsp sherry
- 4 tbsp light soy sauce
- 4 sea bass fillets, with skin on
- 2 tbsp groundnut oil
- 250 g chinese greens, kale, bok choy, or napa cabbage
- 1 red chilli, sliced
- A knob of butter
- 1 steamer
- aluminium foil
- 1 chopping board
- 1 knife
- 1 bowl
- 1 spoon
- 1 wok or frying pan
- 1 wooden spoon
Step 1: Mix the sauce
Place the ginger and half of the spring onions in a bowl, add the soy sauce and sherry and mix together.
Step 2: Prepare the fish
Make three small cuts in the skin side of each fillet.
Step 3: Place fish in steamer
Line the layers of the steamer with foil or banana leaves. The aim is to retain all the juices.
Drizzle some drops of olive oil onto the foil and place the sea bass fillets on top. Spoon the spring onion mixture over each fillet and add a knob of butter. Cover and steam for six to seven minutes.
Step 4: Cook the greens
Meanwhile, heat up the groundnut oil in a wok. Add the greens and stir fry until they are tender. Serve onto a plate.
Step 5: Remove the fish, garnish, and serve
Remove the fish from the steamer and place on top of the greens. Spoon over the juices. Garnish with a sprinkle of chopped chilli and the remaining spring onions.

Is it ok to use sherry vinegar and not sherry or am I in danger if ruining the meal?
In China or any countries/places that don't have ingredients described in the video... butter=pork fat/lards.; sherry vinegar=regular vinegar, Chinese cooking wine (Xu lun? wine), mirin, or use sake. No knife? use butcher knive, or jst steam the fish as is...who says that one needs to serve fillet fish?
i tried this stuff and it taste so good,my hubby was amazed how i cooked it...its just so easy,i didnt even follow all the ingredients,just ginger,sping onions,the same way how the guy cook it...i didnt even add sherry just taste good...the ginger and spring onion makes it delicious AND NO FISHY SMELL AT ALL...terrific...i seldom eat fish cuz of the smell but it made me eat fish...thanks u so much
