How To Make Sea Bream With Chive Dressing

Step 1: Prepare the fish
- 1 sea bream
- 4 tbsp olive oil
- half lemon, juiced
- 1 tbsp chopped chives
- Freshly ground pepper
- Salt
- 1 kitchen tweezers
- 1 frying pan
- 1 sharp knife
- 1 metal spatula
- 1 small bowl
- 1 spoon
Run your finger over the surface of the fish and continue to remove any other prominent bones.
Step 2: Score the skin
With a sharp knife, score across the skin of the fillet three times. This prevents the skin from curling up during the cooking process.
Step 3: Season the fish
Generously season both sides of the fillet with salt and pepper.
Step 4: Heat the oil
Take the frying pan and place it over a low heat.
When it begins to smoke, add 2 tbsp of the olive oil.
Step 5: Cook the fish
Place the sea bream skin-side down into the pan and with your fingers, press down along the length of the fillet. This will keep it flat throughout cooking.
The cooking time varies depending on the thickness of the fish. It is ready to turn over when the edges have turned white and the centre remains translucent.
Carefully turn the fillet over, switch off the heat and leave the fish cooking gently in the pan until the oil stops sizzling. This will take about 2 minutes.
Step 6: Prepare the dressing
In a bowl, combine the remaining oil, the juice of half a lemon and 1 tbsp of chopped chives.
Mix together well.
Step 7: Serve
Place the fish on a plate and drizzle over the lemon and chive dressing. This recipe serves one. Repeat for each fillet required.
Serve hot with new potatoes and salad.
