How To Make Sea Bream With Feta Herb Sauce

Step 1: You will need…
- 1 sea bream, filleted
- 60 ml olive oil
- 1 onion, sliced
- ½ courgette, thinly sliced
- 1 clove of garlic, sliced
- 1 tbsp chives chopped
- for the sauce:
- 60 g feta cheese, crumbled
- 2 tsp thyme, chopped
- 90 ml olive oil
- 15 ml lemon juice
- 2 tsp black pepper, crushed
- salt and pepper
- 1 frying pan
- 1 spatula
- 1 spoon
- 2 bowls
Step 2: Make the sauce
Place the feta in a bowl and add the lemon juice, oil, cracked pepper, thyme and mix together well. Mash it with the back of a spoon to create a paste.
Step 3: Fry the vegetables
Place the pan on a high heat. When hot, add some oil, the onions and stir. Cook for 3-4 mins until translucent. Add more oil, the garlic and courgettes and season with salt and pepper. After 2 mins transfer into a bowl. Keep warm.
Step 4: Season the fish
Season the fillets on both sides with salt and pepper.
Step 5: Fry the fish
Put the frying pan on a high heat and add the fish, skin-side down. It will start to curl so flatten it down with a spatula.
When the sides of the fish begin to turn white, turn the fillets and switch off the heat. Cook very briefly on the other side and place on a tray. Make sure not to overcook.
Step 6: Serve
Mix the chives into the onion and courgette. Place the fish skin-side up on a plate, and decorate with a little of the feta cheese sauce. Serve immediately.
