How To Make Semolina With Caramelised Banana

Step : You will need
- 50 g unsalted butter
- 50 g light demerara sugar
- 30 ml water
- 2 bananas, sliced
- 570 ml baby's usual milk
- 3 drops of vanilla essence
- 50 g semolina
- 50 g caster sugar
Step 1: Caramelise the bananas
Slice the banana's into even chunks and melt the 25 grams of the butter with the sugar gently in a pan before adding the banana slices. Cook the banana's ini this way for 2-3 minutes, but depending on the ripeness of the fruit you may need to do this for a bit longer.
Step 2: Make the semolina
Warm the milk and the other 25 grams of butter in a pan until melted, then add the drops of vanilla essence. Sprinkle the semolina, stir constantly and continue to heat gently until the milk boils and the mixture thickens, which will be about 5-6 mins. You can adjust the consistency by adding either more milk or semolina depending on what the mixture needs.
Add the sugar and stir into the semolina before serving up the pudding mixture into small bowls. Spoon over the caramelised banana's and serve, or blend in a food processor if the pudding is for smaller babies.
