Step 1: You will need

  • 150 g sesame seeds
  • 75 g self-raising flour
  • 45 g sugar
  • 1/2 tsp salt
  • 3 tbsp olive oil
  • 1 egg
  • 1 egg, beaten
  • 1 mixer with flat beater attachment
  • 1 large bowl
  • 1 baking tray
  • wax paper
  • 1 brush
  • 1 knife

Step 2: Combine the ingredients

Into the mixer bowl, add the sesame seeds, flour, sugar, salt, egg and oil. Blend slowly until well combined.

Step 3: Chill

Transfer the dough to a large bowl and put it in the fridge to chill for 1 hour.

Step 4: Preheat the oven

Set the oven to 180ºC (360ºF/ gas mark 4).

Step 5: Shape the dough

After approximately 1 hour, remove the dough from the fridge. On a flat working surface, mould and roll it into fingers. Keep them short as the mixture is fragile.

Step 6: Bake

Cover the baking tray with wax paper and arrange the fingers on top. Brush each one with the beaten egg.

Place the tray into the oven and bake for 7-10 minutes. When done, remove.

Step 7: Serve

Sprinkle over a little icing sugar and serve with tea or coffee.
