Learn how to make this quick easy recipe for shrimp ceviche, a popular seafood dish. It uses simple fresh ingredients, and is great for dinner parties.
The ingredients you need for that are: some prawns, we're going to use raw prawns, and this is how they look when they're cooked. We've got some coriander or cilantro, we've got avocado, we've got chili, fresh red chili, fresh diced cucumber, red onion, lemon juice, lime juice to finish at the end, and a little seasoning. First of all, we're going to cook the raw prawns.
Now, the reason why we cook them is because you can make this with raw fish, but with prawn, because it's a shellfish, we feel that you need to just blanch it first. You have to be quite careful with this dish, because the proteins in the fish will be cooked by the acidic juices in the lemon and the lime, so you mustn't cook them for too long, otherwise they'll be rubbery. So, we're literally, in the pan, we're just going to blanch them in boiling water, and you'll notice that they cook really quickly, and the way you tell that they're cooked is when they're pink.
We're just going to leave them for two minutes. You should add some salt in there, couple of teaspoons of salt, and then we're going to plunge them immediately into cold water to stop them cooking any further. So when we've done that, we're going to chop them, which Flip is going to do now.
What we've done before this is literally slice them down the back. Here we go then, we've got the shell, we've taken off the shell and take the tail off as well. We're keeping that one with the tail on for decoration.
You need to de-vein the prawn and get the toxins out, so we are going to just de-vein it, you literally just cut that in half and then slice it up thinly so that we can mix it up with all the other ingredient. You must de-vein, you must get rid of the intestines. And is that like a black strip in the back? It is; you can't miss it.
And then, while Flip is doing that, I'm going to pop into the bowl - we're making enough for one person, so we need just a quarter of chopped avocado, a quarter of fresh red chili - serrano chilies are really good to use for that but you can't always get hold of them - quarter of finely chopped cucumber, one quarter of finely chopped red onion, some lemon juice, probably about half a lemon there, and then the prawn is going in, always at the last minute, the prawn.
