How To Make Shrimp Creole

Ingredients

  • shrimp
  • 1/2 red onion, chopped
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • celery, chopped
  • garlic, minced
  • juice of 1 lime
  • 2 bay leaves
  • celery leaves, chopped
  • 2 sprigs thyme
  • 2 tomatoes, chopped
  • 1 habanero pepper, deseeded
  • fresh parsley
  • 1/2 tsp rum
  • pepper
  • salt

Method

In a bowl, squeeze the lime juice over the prawns and mix together.

Heat some oil in a shallow pan, add the chopped onions and sautee. Add the green and red peppers and celery. Cook for 1 minute and add the chopped garlic. Stir the garlic through, add the chopped celery leaves, 2 bay leaves and 2 sprigs of thyme. Add a small slice of a habanero pepper, making sure to remove the seeds. When the vegetables begin to soften, add the chopped, peeled and deseeded tomatoes. Cook until the vegetables have softened, then add a splash of rum.

Add the prawns, but not the lime juice, and stir. Add a touch of water to create a sauce. Add salt to taste and then add black pepper and chopped fresh parsley. Cook for 6 to 8 minutes, until the prawns have turned pink.
