Step 1: You will need:

  • 12 medium shrimp, peeled and cleaned
  • 100 ml olive oil
  • 60 g butter
  • 4 garlic cloves, sliced
  • 4 small chillies
  • ½ tbsp paprika
  • 1 tbsp parsley, chopped
  • ½ tsp salt
  • 1 saucepan
  • 1 spoon
  • 1 earthenware dish
  • 1 set of tongs

Step 2: Make the sauce

Place the saucepan over a medium heat, add the butter and oil and allow it to melt. Then add the garlic, the chillies, paprika and salt.
Bring it to a boil, whilst stirring and turn down the heat. Cook for a few seconds more then remove the pan from the hob.

Step 3: Cook

Place the earthenware dish onto the hob and heat it through. Add the garlic oil with all the garlic bits. When very hot, add the shrimps. Let them cook for a minute or so and turn them over to cook on the other side.

Step 4: Serve

Sprinkle over the chopped parsley and serve whilst still sizzling and piping hot. It can be served on its own or with some crusty bread to soak up the spicy sauce.

    I had this when I lived on the Costa del Sol and the bar owner gave me her recipe. I heat some olive oil, add a crushed garlic clove and chillies, add the shrimps(or we call prawns in the uk) when they are bubbling sprinkle with paprika. We eat every Friday with crusty bread and allioli....and of course a glass of red wine.

    The way in which "Gambas al pil-pil" or Shrimp pil-pil are cooked in Spain is without butter. Butter its not a common ingredient for cooking in the mediterranean area. Also we don't cook first the sauce in a saucepan and then put it into an earthenware dish. We do it directly in the earthenware dish. 1. Pour the oil and let it get a high temperature. 2. add the garlic and chillies and avoid overcooking. 3. Add the shrimps and the paprika and just when you are ready to turn the heat off, sprinkle the parsley. The way in which is shown in the video looks really tasty but I thought I should tell how its done in Spain, its origin. I cook it very often for my wife and she allways begging for more....
