How To Make Shrimp Risotto With The Microwave Gourmet
Step 1: Prepare The Onion
- ½ medium sweet onion, diced
- ¾ cups (190ml) arborio rice
- 1 ¼ cups (310ml) chicken broth
- ½ cups (120ml) green peas
- 220 g shrimp (cleaned)
- ¼ cups (60ml) chopped dill
- ½ cups (120ml) chopped parsley
Step 2: Stir In The Rice
Stir in the rice, covering it in the oil and onion combination. Cook uncovered for one and a half minutes.
Step 3: Add The Chicken Stock
Add the chicken stock to the rice mixture and cook for 8 minutes uncovered. There's no need to stir the rice as with a stovetop risotto.
Step 4: Add The Shrimp And Peas
Stir in the raw shrimp and peas (fresh or frozen). Microwave for 4 minutes uncovered.
Step 5: Stir In Herbs
Check the consistency of the rice- it should be slightly creamy. Add a splash of chicken stock if rice is too firm. Stir in the parsley and dill. Cover dish with a cloth and let stand for about a minute to absorb extra stock. Add salt and pepper to taste, and savor this classic Northern Italian dish. Done.

I love it! You completely destroyed a classic dish! This looks like a decent shrimp pilaf. But NOT a risotto. Was this a joke? I would love to taste this after it sits for 20 minutes!
