How To Make Simple Root Vegetable Puree
Step 1: Prepare
- 4 medium potatoes, mashed
- ½ medium swede
- 1 medium parsnip
- 1 medium carrot
- 420 ml unsalted vegetable stock
Step 2: Cook
Melt the butter in a saucepan. Add the vegetables and fry for five minutes. Cover with the vegetable stock, bring to the boil and simmer for about 20 minutes or until the veg is tender. Strain over a bowl and keep the liquid.
Step 3: Puree
Puree the vegetables in a food processor. Add the mashed potato and enough of the liquid to acheive the desired texture.
