How To Make Smoked Aubergine With Yoghurt

Step 1: Smoke the aubergine
- 2 large aubergines
- 200 ml yoghurt
- 100 g cherry tomatoes
- 4 cloves of garlic
- 1 sprig of rosemary
- 1 sprig of thyme
- 150 ml olive oil
- 1 tbsp chopped parsley
- salt
- pepper
- 1 frying pan
- 1 small saucepan
- 1 bowl
- 1 spoon
- 1 whisk
- 1 strainer
Tip: the cooking of the aubergine can be done in a very hot oven but they would lose some of the smoky flavour.
Step 2: Cook the tomatoes and garlic
Put the cherry tomatoes and the garlic cloves in the saucepan and cover with the olive oil. Add the herbs and bring to a very low simmer for 7 mins then allow to cool down.
Step 3: Smoothen the yoghurt
Pour the yoghurt into a small bowl and whisk it a little to create a smooth texture.
Step 4: Add the tomatoes
Now add the tomatoes, garlic, the chopped parsley and some of the oil.
Season with salt and pepper and mix well.
Step 5: Clean the aubergines
Once the aubergines have cooled down a little, peel off the burned skin and put them in a strainer so the excess water can drain away.
Step 6: Let them strain
Leave them in the strainer for about 10 min to drain properly.
Step 7: Serve
Place the aubergine on a plate and dress with the flavoured yoghurt.
Tip: you can flavour the yoghurt with Moroccan lemons, Indian spice mixtures, pickles etc.
